Vegetable Biryani

Today the lunch Menu for Blogging Marathon#10 by Srivalli was a little simple then yesterday.Vibha wanted Vegetable Biryani. So teamed it with Onion Raita, some fresh salad and our ever staple Thair saadam:-)LOL!!I have come across numerous recipes of vegetable biryani bu this is the one I make often . Vibha loves the flavour of this biryani with the mint in it.
INGREDIENTS
Basmati rice 1 cup
Water 2 cups
Onion 1
Green capsicum 1
Carrot 2
Beans 4-5
Green peas 1/4 cup
Green chillies 2
Oil 1tbsp
Lemon 1
Mint leaves 2 tbsp
Cumin Seeds 1/2 tsp
Garam Masala 1/2 tsp
Turmeric powder 1/2 tsp
Salt to taste
TO BE GROUND INTO PASTE
Cardamom 2
Clove 2
Ginger 1/2 ” piece
Garlic 2 cloves
Cinnamon 1/2 ” piece
PREPARATION
Wash the rice and keep it soaked in 1 cup water for 10 minutes. Drain and keep aside
Make a paste of the ingredients with minimum water necessary or just powder it in mixer.
Cut all the vegetables into 1 ” pieces. The even the better:-)
Now take a pan and heat the oil. When it is heated well add the cumin seeds. When the cumin starts sizzling add onion and saute.Now add the green chillies and saute for a few seconds.
Now add the paste and mix well and continue to fry till a good flavour emanates.
Next add all other vegetables in order of capsicum, carrot, beans and peas. Saute for 7-8 minutes. Now dunk in the mint leaves and saute for a minute till the leaves start wilting. Add the turmeric powder and mix well
Add the washed rice and mix well.Now pour the (2 cups) reserved water into this ans mix well. Add salt, garam masala to this. Squeeze the lemon and mix well
Close with a lid and cook till done cooking in low flame. It takes about 35-40 minutes.
Serve warm with a Raita of your choice.
