Brinji Rice

Brinji rice is a very flavourful rice which is
served in most South Indian weddings. The coconut milk used here gives the
richness and the whole spices add to the flavour and taste. So here is my first
post for this week with the theme as Rice dishes.
INGREDIENTS

Cut all the vegetables into small cubes. Slice the
onion. Slit the green chillies

Heat the ghee in a pressure pan. I have used a 2 lt
cooker for this.

When it’s moderately hot add the cumin seeds and
saute for a second

Now add the whole spices and continue to saute for
few seconds

Now add the green chillies and onion. Saute on low
flame till the onion becomes transparent.

Now add the ginger garlic paste and saute

water. Mint leaves and salt. Mix well.

Close with the lid and cook on high flame upto 3

Switch off the fire
Once the pressure has reduced completely, fluff it
up with a fork,
