Jam Biscuits

Life is a mystery..isn’t it. Just when you think that you have understood a certain aspect, the whole situation flips over and you are back to square one and life proves that you have not yet understood:-)I am sure we all go through these phases in life and sometimes it bogs you down. When it does, how do you overcome it…Most certainly if there is a kid around, you are sure to bounce back !!One one such situation it was a mere request from my kiddo to bake these cookies , led me to this recipe in Anushruti’s space. It required the minimum ingredients and I rushed in to bake these cookies to the delight of my kid and to my surprise I realized that the thing bothering me till then had suddenly vanished:-)
 Here is the simple yet delicious Jam biscuit recipe.
Butter                               1/2 cup
Icing sugar                        1/2 cup
All purpose flour               3/4 cup
Vanilla Custard Powder      3/4 cup
Corn Flour                          4tbsp
Yogurt                               1 to 3 tbsp(first mix 1 tbsp, if necessary use the left over yogurt)
Vanilla essence                   1/2 tsp
Mixed fruit jam                    4tbsp
Preheat the oven  to 180C
Cream butter, icing sugar and vanilla in a bowl until light and fluffy.
 Add the flour, custard powder and corn flour and mix well.
Now add the yogurt and form a smooth a smooth round ball
On a lightly floured surface, roll the dough into 5 mm thickness, cut with a biscuit cutter
Make an impression in the center with the thumb and fill with the jam
Place these biscuits on the greased tray
Bake for 15 minutes or till done
