Kartoffelbrot-German Potato Bread

I had
booked this soft bread from Priya’s and
baked this for this week’s bread theme. The addition of Potato makes the bread
so soft. The bread is again a favourite with my daughter. Head over to Priya’s

INGREDIENTS
Medium
sized Potato
1
All
purpose flour
1 ¼ cup
Instant
Yeast
1/2 tsp
Salt
1/2 tsp
Warm
water
2-3 tbsp
Olive Oil
2tsp
PREPARATION
 Wash and
peel the potato. Cook it till soft. Mash it and keep aside
Add the
flour, yeast, salt, water and the cooked mashed potato to the bowl of the stand
mixer and knead in MINIMUM for 1 minute
Now
increase the speed to ONE and add the oil and knead for 7 minutes till you get pliable
dough
Transfer
this to a well-oiled bowl, cover it loosely and let it double. Mine took 1 hour
to double
Now take it
out to a working surface, deflate it gently and make it into a round ball.
I transfer
this to a prepared baking tray, You can choose to transfer this to a baking pan
too. Cover it loosely and let it rise again for 45 minutes
Preheat the
oven to 220C
Brush the
loaf with milk and bake for 30 minutes or till done
Transfer this
to a cooling rack
Once
completely cool, slice it and serve with a dip of your choice
I served it
with Salsa and my family loved it
