Milagu Kuzhambu in a pressure cooker
Milagu Kuzhambu is a speciality of my mother. It is thick and creamy and when had with hot rice and ghee is it so delicious. I have used the same recipe but tried it in a pressure cooker to reduce the cooking time. This recipe and the cooking method is perfect for a bachelor cooking too.
Black gram dal 1tbsp
Fenugreek seeds. 1/2 tsp
Red chillies 3
Tamarind A big marble sized
Curry leaves Few
Oil 1 tbsp
Salt To taste
Heat oil in a pan and when sufficiently hot add the black gram dal, fenugreek,pepper and red chillies, saute in medium flame till the black gram turns to golden brown.
Now add the curry leaves and saute for a minute in low flame. Switch off the fire and let it cool
Transfer this to a mixer along with the tamarind.Powder it to a coarse powder. Now add little water and grind it to a smooth paste
Heat 1 tbsp oil in a pressure pan, and when sufficiently hot add the mustard seeds.
When it begins it splutter add asafoetida
Now add the ground paste and sauté for 1 minute in low flame
Add enough water,sprinkle salt, mix well, close with the cooker lid, put the weight on and cook for 3 whistles.
When the pressure has completely released, open the cooker and mix the kuzhambu.
Serve hot with hot rice, ghee and the best combination would be paruppu thuvaiyal
