Pumpkin soup

For the final day of Blogging Marathon#9 I decided to go with yet an another unconventional soup-The Pumpkin soup. This is creamy, filling and very tasty.I felt that a bowl of this filling soup could replace my dinner…Healthy Isn’t it???!!!!

INGREDIENTS

Pumpkin pieces 2 cups

Carrot 1

Onion 1

Garlic 1 Clove

Oil 1 tsp

Milk 1/4 cup

Salt to taste

PREPARATION

Slice the onions thinly

Chop the pumpkin and carrots.Remove the skin of the Garlic

Heat a pressure pan , add oil to it ans saute the onions and garlic till the onion turns transparent.Now add the carrot and chopped pumpkin pieces and saute it further for 1 minute

Add enough water(nearly 3 cups) and pressure cook it up to 2 whistles.

Let it cool down

Transfer the vegetables to a blender and blend i into a soft puree

Transfer this back to the pressure pan with the water. Mix well

Add the milk to this and mix well

Simmer in a very low flame for 7-8 minutes with the required salt added to this

Serve warm with a pinch of pepper powder to this!!!!!

I make pumpkin soup pretty much like this one recipe, except for the milk… next time I'm going to add it, it just looks like it will make it so much smooth…:0)
