Shhhh cooking secretly challenge is a facebook group which comes up with a theme each month where the members are paired and the theme is given out to secretly get our dishes  done. This month the theme was Summer coolers. Prathima who blogs at Prathu’s food is paired with me and she suggested that I use cucumber and mint as my secret main ingredient.

With the early onset of summer, we are always looking out for ways to quench our thirst and to hydrate ourselves.I decided to make a cold soup to beat the summer with these two ingredients.  Gazpacho or cold soup is said to have its origin in the andulasian region of spain. You can make gazpacho with many vegetables like tomato, watermelon and strawberry to name a few.

Remove the skin of the cucumber. Slice it

Remove the pulp from the ripe avocado

Add the washed mint leaves, cut cumber, yogurt, avocado, salt and 1 cup of water to the blender jar

Blend everything togther into a smooth paste. Transfer it to the serving bowls. top it with cut peppers. Serve chilled
