Samai Kesari

 For the week 2 of Blogging Marathon it will be festive recipes. Next week it is diwali and the search for new sweet is on and a simple healthy quick dish is this kesari.
Samai (Little Millet)             1/2 cup
Sugar                                     3/4 cup
Hot water                              1 1/4 cup – 1 1/2 cup
Ghee                                      2 tbsp
Cardamom powder                1/4 tsp
Cashew                                   few
Raisins                                   few
Heat 1 Tbsp of Ghee in a pan and roast the millet in it for 1 minute
Now add the hot water and mix well and let the millet cook in it in low flame.First add 1 1/4 cup of water and cook in a low flame for few minutes, it need be add the other 1/4 cup.
Once all the water is used  and the millet is cooked well ,add the sugar and cardamom powder.Mix well.At this stage , the mixture starts to liquify.
Now cover it and let it cook for another 3-4 minutes
When there is no more liquid, add the rest of the ghee, mix well and switch off the fire
Ina pan add 1 tbsp of ghee and roast the cashew and raisins till the cashew turns slight brownish
Pour this on the prepared kesari.
Serve warm.
