Sambhar -Saravana Bhavan Style

Have you also been on the look out for the recipe of a perfect sambhar- saravana Bhavan style to go with your idli’s and Dosas’s??I did and the search led me to Radha’s Recipe.Thank you Radha for the perfect Recipe .I tweaked it a little and I must say, it perfectly matches Saravan bhavan sambhar’s flavour and taste
INGREDIENTS
Shallots           1 cup
Tomato            1 big
Tamarind         1 very small marble size
Tuvar dal        1/4 cup
Moong dal      1 tbsp
Red chill         2
Turmeric powder  1/4 tsp
Asafoetida            1/4 tsp
Sambhar powder    1tsp
Coriander               1 tbsp
Curry leaves   few
Salt                      to taste

TO BE GROUND INTO A PASTE
Coriander seeds          1 tbsp
Fenugreek seeds          1tsp
Long red chillies            2
Fried gram dhal            2tsp(Pottukadalai)
Tomato                        1
Oil                                1tsp

FOR TEMPERING
Oil                               2tsp
Mustard seeds             1tsp
Fenugreek seeds          1/4 tsp
Asafoetida                   a pinch
 
PREPARATION
Cook both the dhal together with enough water and turmeric powder  in a pressure cooker upto 3 whistles
Soak tamarind in 1 cup of warm water for 10 minutes. Squeeze to to get the extract and keep aside
Peel shallots and keep aside
Cut one tomato finely
Roast coriander seeds, red chillies, fenugreek seeds and fried gram dhal in 1 tsp oil. till a good flavour emanates. Let it cool Grind this along with 1 tomoto and keep aside.
Heat oil in a pan and add the mustard seeds. When it splutters add the fenugreek, red chillies and asafoetida, saute and add the shallots. Continue to saute till it starts to become transparent.
Now add the cut tomato and continue to cook for 1 minute .
Now add the tmaring extract and salt. Let it boil for 2 minutes
Sprinkle the sambhar powder and boil again
Now add the cooked dhal and the ground paste with some more water if necessary
Put the curry leaves for that wonderful flavour
Let everything boil for 3-4 minutes in low flame and then add the cut fresh coriander
Lovely delicious sambhar ready for your perfect south indian breakfast!!
