Whole Lemon Pickle

HI
For the third day of lemon recipes it is another
pickle variety. This can be consumed immediately. Can be refrigerated for 10
days only.
INGREDIENTS
Lemon
6
Salt
1
½ tsp
Chilli
powder
2tsp
Oil
1tbsp
Mustard
1tsp
Asafoetida
1/2-3/4tsp
Fenugreek
Powder
1/4Tsp
Hot
water
1/4cup
PREPARATION
Boil the whole lemons in water for about 5 minutes.
Here the skin starts to soften
Heat oil in a pan and when sufficiently hot add the
mustard seeds
When the mustard starts to splutter add asafoetida
and saute for a few seconds
Now add the whole lemon and saute
Add chilli powder and salt and continue to cook for
4-5 minutes
Now add the fenugreek powder and mix well
Add boiling hot water, mix well and cook for 1
minute
Switch off the fire

After it cools down
completely bottle it in air tight bottles and refrigerate
