Aloo Bajra Roti

Usage of millets in our daily intake is highly recommended.The known benefits of the usage of millets are many especially if there is a diabetic at home.Here the addition of potato makes the roti soft and very delicious.
INGREDIENTS

Potato(small)

Onion
1
Coriander
3tbsp
Bajra flour
1 ½ cup
Red chilli powder
1tsp
Asafoetida
 ¼ tsp(optional)
Luke warm water
1/4 cup or more
Salt
To taste
Oil
 To drizzle
PREPARATION
Steam cook the potato. Let it cool. Remove the skin and mash well
Finely chop the onion and coriander
In a wide bowl add the flour, mashed potato, chilli powder, asafoetida, finely chopped coriander and chopped onion and mix well
Just add enough luke warm water and knead it into a soft pliable dough
Divide the dough into 10 equal parts
Grease a plastic sheet or a banana leaf and pat these balls into 6”(approximately) discs
Heat the griddle and transfer this prepared roti to it carefully
Let it cook in minimum heat for a minute
Now slowly flip it over and let it cook on the other side too. Now drizzle  a little oil and cook on both sides till it starts to brown. Remove it and cook all other rotis the same way
Serve warm with dal and pickle of your choice
