Mini Vegatable Uthappam

Idli is one dish which my daughter refuses to eat. A
south Indian, particular a madrasi and does not eat idli is highly unacceptable…well,
that is what my family thinks. I have tried to give her idli with different
chutney’s and sambhar and all my attempts failed. Finally I decided to make
uthappam with some vegetables with the same batter and the resistance came down
considerably. Here is how she liked to eat uthappam when she was a kid

PREPARATION
Soak rice with fenugreek seeds in a big bowl with
lots of water for 3 hours

Soak the dal in enough water for 3 hrs
Grind the dal first in a wet grinder till smooth and

Now grind the rice and fenugreek seeds with enough

Combine the dal paste to this
Add the necessary salt, mix well and let it ferment

Next morning mix the batter well. Heat the mini
uthappam pan, and pour a ladle full of batter into each depression.

Now sprinkle 1tbsp each of vegetables that you have

Drizzle oil around and close with a lid and cook on
low flame

When the colour of the base starts to brown, check
if there is no more raw batter and take it out

Serve warm with a chutney of your choice
