150 gms Golden Raisins
75 gms Currants
75 gms Dried kiwi
75 gms Dried cranberries
75 gms Glazed cherries
75 gms Dates chopped
70 gms Dried apricots
20 gms Candied ginger
from 1 lemon Lemon zest
from 1 orange Orange zest
200 ml Apple juice
FRUIT MIX TO BE COOKED
125 ml Apple juice
125 ml Orange juice
200 gms Castor sugar
150 gms Butter
1 tsp Clove powder
1 tsp Nutmeg powder
1 tsp Dry ginger powder
Dry INGREDIENTS
400 gms All purpose flour
1/2 tsp Salt
1 tsp Baking soda
1 tsp Baking powder
OTHER INGREDIENT
3 Eggs
130 gms Slivered almonds
20 Blanched almonds
FOR THE SOAKING SYRUP
65 gms Water
100 gms Castor sugar
2" Cinnamon stick
1 Star Anise
1 orange Orange peel

    Christmas is fast approaching and we can see most of the bloggers posting recipes of fruitcakes. This blog already has 2 recipes of the fruitcake and I was not keen to try a new recipe. And then my friend landed from Rajkot and when I asked her,   what should I bake for her, Her reply was a fruitcake. And then incidentally Anuja had posted a Christmas fruitcake recipe on the group Simple baking happy bakes.

    Christmas Fruitcake

    This week the team of Foodie Monday blog hop decided that the theme for this week to be Christmas recipes. Just when I was wondering as to how to manage the posting for different groups without omitting any submission, even in this busy schedule with a lot of travelling, this theme just made things easy for me. This amazing Christmas fruitcake fitted the theme of both Foodie Monday blog hop and Bake-a-thon.

    Anuja is kind enough to give many tried out recipes and this Christmas fruitcake recipe is a keeper. She had given the option of soaking the fruits in either rum or apple juice. I have soaked it in apple juice. I have brushed the cake with the suggested sugar syrup. You can choose to brush it with sugar syrup spiced with cinnamon and star anise.

    Verdict: The cake turned out to out of the world. It has a wonderful crumb too.

    Steps

    TO BE COOKED

    Add the apple juice, orange juice, spice powders, butter and sugar in a cooking pan and bring it to boil.

    Now add the mixed soaked fruit and simmer for 5-10 mins. Let it cool completely

    Preheat the oven to 170C

    Grease the pan and line it with parchment paper

    Mix in all the dry ingredients in a plate and keep aside

    Whisk the eggs separately till frothy and keep aside

    Now fold in the dry ingredients in the cooked dry fruit syrup.

    Finally fold in the eggs to this mixture

    Transfer the batter to the prepared pan and bake for 60 mins or until the skewer inserted in the middle comes out clean

    Transfer it to the cooling rack

    Meanwhile boil the ingredients given under the sugar syrup. Keep it warm

    Cool the cake for 10 minutes and brush the cake on all sides with the sugar syrup. Let it cool completely

    Slice and serve it.

    The cake looks so lovely. The contrast of the cake’s brown colour with the light falling on it is beautiful.

    Fruit cakes are literally floating everywhere! Unfortunately I am not a fan of the store bought ones, they are too sweet for me, but though I would love to try making one at home, the whole process makes me feel lazy. This sounds really delicious, and the plus point is that it is eggless too! Since my family is around, I guess it is a good time to try and bake one… hmm… the cake looks amazing, so much goodness going in there!

    Absolutely stunning this looks Veena! If being busy, you can bake such a wonderful cake, I can’t imagine what you can achieve in your spare time. Looks incredibly moist and that shine on top is unmatched. Absolutely adore a good fruit cake and I wish I stayed closer.
