Elai adai is a steamed delicacy mostly prepared in kerala. I feel this is a variation of the vella kozhukattai that we prepare for pillayar chaturthi. Vibha recently sent me a link of elai adai . She loves these steamed kozhukkatais and I wish she was here to taste this now
Elai here refers to the banana leaves used to steam these vella adai. The dough is spread on the banana leaf, on which a layer of pooranam is spread and then it is steamed to make these delicious vellai ela adai

TO MAKE THE FILLINGMix jaggery and coconut and 2 tbsp of water. Cook till it becomes liquid. Now add cardamom powder and continue to cook till everything comes together. Switch off the fire and add the ghee. Mix well. let it cool completely |

FOR THE COVERINGboil the water with salt and oil. Now switch off the fire and add the rice flour to this. Mix well and knead. Let it cool completely |

Take the small tender banana leaves. Wipe it clean. Take one lemon sized ball of the dough. Spread it into a thin circle. |

Now on one half of the semi circle spread 2 tbsp of filling and flip the other half on it with the bana leave, so that it resembles a parcel. Make all the parcels this way |

Place it in a steamer and steam till done. serve warm!! |

Wow! that is such a traditional recipe. I am sure the taste of the banana leaf adds a new dimension to this one.
We make this for every Eid at our place, we gorge them in batches with lots of tea… Love how you have made them, they make me nostalgic and tempted at the same time…
