Julekake is a festive bread, traditional served during Christmas in Norway. This bread is more like a cake and it reminds me of our own tutti fruity bread but Julekake is flavoured with cardamom. When I baked this bread, the whole house was filled with the aroma of the bread and this recipe from Pj’s blog was eggless and so I could taste it too. Loved this candied fruit studded bread

Ina pan, heat milk, butter and water. When it starts to boil remove from heat and let it become luke warm

In the bowl of the stand mixer add the flour, yeast, sugar and salt and mix well. Now add the butter milk mixture and knead it for 7 minutes in SPEED 1 into a pliable dough. Transfer this to a well oiled bowl and cover it. Let it rest for 45 minutes for it to double

After 45 minutes, gently deflate the dough, roll it into a circle

Spread the candies fruits evenly on the surface as shown. Press lightly

Now roll it into a swiss roll and then knead it to form a ball so that the fruits are well incorporated. Transfer it to a prepared baking tray

Preheat the oven to 180C

Brush the bread with the milk sugar mixture

35-40 mins

Bake for 40 mins or until it starts to brown

Transfer it to a cooling rack, slice and serve.
