Ingredients

Adjust Servings:
1/4 cup Proso millet
1/2 cup Water
2 tbsp Ghee
few Cashew
2 Tbsp Mint leaves
2 Cardamom
1 Clove
1 Bayleaf
1/4" piece Cinnamon
6 Pepper corns
1 Onion
To Taste Salt

Proso millet or pani varagu has got a good texture when cooked. I feel it is perfect for the pulav like consistency. So today for the pulav fest I cooked a pulav variety for the alphabet G. But instead of just Cooking plain ghee rice with millets I added some fresh mint leaves. These mint leaves made a lot of difference in terms of flavour. This is such an easy dish that the cooking time for this dish will be a maximum of 10 minutes. This rice has no such preparation other than having the whole masalas and sliced onions and mint. Millet adds a lovely texture to this mint flavoured proso millet ghee rice.

Mint flavoured proso millet ghee rice

To prepare this proso millet ghee rice, I have used proso millet or pani varagu. I cooked the millet in a pressure cooker. The spices and the onions are then sauteed in ghee with mint and the cooked millet is mixed with it and this millet rice was ready to be served

Slice onions and keep aside

Cook the millet in a press cooker. let the pressure settle. Fluff it up with a fork. Transfer to a different vessel. Keep aside

Heat ghee in a pan. Add cashew and fry till they become brown. Take it out and keep aside

Add the whole spices to the ghee and fry for a minute.

Now add the sliced onions and saute till it becomes transparent.

Add the mint leaves and saute for a minute

Now add the cooked millet and salt, mix well and cook for a minute. Switch off the fire. Add the fried cashew and serve warm

I too made ghee rice for this marathon, I know it is very flavourful and goes perfectly with any curry. Love this healthier version of the regular ghee rice! Lovely share

I too made ghee rice for this marathon, I know it is very flavourful and goes perfectly with any curry. Love this healthier version of the regular ghee rice! Lovely share
