A quick one-pot dish with Avarekaalu and cooked with a blend of spices and herbs in an electric pressure cooker
Today we members of Blogging marathon are celebrating the month of April with the pulao/Kichdi/Biryani festival. We are all going to showcase 26 recipes of pulao/biryani/kichadi with different grains. I will be showcasing different pulao and biryani in the A-Z series. But this time, the pulao’s will be cooked with different grains. So I shall be using quinoa and all the millets except white rice. Since we are of white rice, I did not want to miss out on these one-pot dishes. Hence I will be blogging 26 one-pot dishes with grains other than rice. The first in the series is this Avarekaalu quinoa pulao and this is cooked in the Wonderchef nutripot which is an electric cooker. So the same recipe can be made in any other brand of electrical pressure cookers like instapot or Cosori too.
Avarekaalu or hyacinth beans are available in plenty in winters. That is the time that I buy this in lots and freeze it so that I have stock for over 6 months. I used the first batch of avarekaalu in the pulao. The day the dietician told me that we both have to go off white rice for a while, I was rather worried. I wondered how I will cook regular food without white rice. Then I slowly started replacing white rice with quinoa and millets. I realised that replacing white rice in most recipes did not make any difference at all. Rather we love the texture of quinoa and the taste of millets. Now we do not miss white rice at all. And since I have started using the electric pressure cooker, cooking multiple dishes is so fast and easy.
In this avarekaalu pulao. I have first ground the masala paste. Then I sauteed it for 1 minute. After that, I added quinoa with the necessary water and cooked for 5 minutes. So the pulao is ready in a maximum of ten minutes. The pulao is very flavourful as I have used coriander and mint to make the masala paste. The quantity of the coriander or the mint leaves can be varied according to your taste.

FOR THE GREEN MASALA PASTEGrind the washed coriander, Mint, green chillies, ginger, garlic and fennel seeds with 1/2 cup of water into a smooth paste and keep aside |

TO MAKE THE PULAOSwitch ON the nutripot/Instapot. Press the saute mode. When it heats up add the oil to it. |

In a minute the oil will heat up. Now add the cumin seeds. When it sizzles add the bay leaf, cardamom, black cardamom and cinnamon and saute for few seconds. |

Now add the sliced onions and saute for few seconds. |

Now put the ground paste into the nutripot/instapot and mix everything together. Let it cook for a few seconds. |

Now add the washed quinoa, and 2 cups of water and mix well |

Squeeze the lemon juice and add salt to it. Mix well. |

Cancel the saute mode |

Close the lid of the electric pressure cooker and keep the vent in seal position. |

Press the manual mode ON. Keep the timer for 5 minutes. |

After 5 minutes, it will go into the keep warm mode. Cancel this mode. Let the pressure release naturally. When you open fluff it up with a fork. Serve warm with raita and paapad |

Rice is so easy to substitute but still we hesitate. I am so looking forward to all your rice free pulao recipes this month. The avarekaalu rice looks so spicy and with quinoa it is so nutritious too.
