I love the way they toss and cook the vegetables and rice with soya sauce while making fried rice in roadside dhabas. I am always in awe of the precision with which they work. I have not seen one-grain fall off the big kadai. The toss the rice from a huge kadai with a handle in one hand. I wonder how. I always struggle even with two hands while working in my kitchen. These guys, on the other hand, work tirelessly with much less comfort in that kitchen. Yet they dish out the lovely parotta and fried rice. So inspired by these people I have cooked Varagu pineapple fried rice for the letter F, Fried rice it is:)
I am not very fond of Chinese cuisine or even indo Chinese cuisine for that matter. But some days, I am tired of making the same south Indian dish and that is when I become adventurous. On one such adventurous day, this fried rice took its avatar. Since I had a pineapple, I used it up in this and loved its flavour. Now you know that cooking with millets is not difficult and you need not to restrict your millet cooking to south Indian recipes. Be adventurous and dish out all those delicious rice varieties in a healthy manner

Wash and clean the millets. Cook it in 1/2 cup water in a pressure cooker up to 2 whistles. Let the pressure release normally. Fluff it up. Transfer it to a different container. Let it cool |

Heat oil in a pan and cook the vegetables with salt added in high flame, Stirring all the time. When the vegetables are cooked and soft add the soya sauce, chilli sauce and pepper powder, mix well and cook for another minute |

Switch off the fire, add the cooked millet. Mix well. Adjust the salt if necessary and serve |

Pineapple fried rice is very interesting…must be tasting real good. I love the taste of pineapple in savory dishes , so I assume this rice too would taste awesome.Good one .
So true no need to restrict our humble millets only to the traditional recipes… Love this healthy twist!!
