Vegetable Bajra Sevai / Kambu Sevai

Another healthy breakfast option would be this sevai
with Bjra sticks. These bajra sticks are now easily available in all super markets
in Chennai and preparation is very easy too. This is a healthier option than
semiya  and is perfect filling breakfast
for a diabetic.

INGREDIENTS
Bajra
sticks

Onion

chillies

Asafoetida

Turmeric
powder

tsp
Curry
leaves
Few
Coriander
1tbsp
Ginger
½”
piece
Mustard
seeds
½
tsp
Salt
To
taste
PREPARATION
Soak the bajra sticks in enough water for 5 minutes
Drain the water, steam in it idli plates, idli
cooker for another 5 minutes. Switch off and let it cool down completely
Now chop all the veggies into small pieces
Heat oil in a pan, when sufficiently hot add the
mustard seeds. When it crackles, add the green chillies, ginger and asafoetida.
Saute for few seconds
Now add onion and saute till it becomes transparent,
add all the other veggies and mix well, close with a lid loosely and continue
to cook in low flame till the veggies are well cooked
Now add the steamed bajra sevai, salt, curry leaves
, mix well and cook for another 4 minutes in low flame.
Switch off the fire and garnish with coriander.

Serve warm
