Xtra Crispy Millet Adai

Having blogged about recipes alphabetically for the
A to Z challenge with ease till now, today for the alphabet X , it is difficult
to find recipes which starts with the alphabet X and to find recipes in tamil
cuisine is next to impossible. So it was agreed upon that we could add an adjective
or suffix with an alphabet X . So here it the adapted recipe for the same
INGREDIENTS

Millet / Saamai

Banyard
Millet/Kuduraivali

Urad
dal

Tuvar
Dal

Red
chillies

Asafoetida

cup
 
PREPARATION

Soak both the millets and dal’s  together for 3-4hours
Grind rice, dhal and chillies to a paste in a mixer. Add salt
and grind again.
Let the batter not be very smooth. A little coarseness adds
to the texture.
The batter should not be runny too
Pour a ladleful of the batter on the tava and spread it using
a circular motion, to make a thin dosai, keeping it in very low flame
Drizzle a little oil on the sides and cook.
When the lower side turns a little brown. turn over and cook
on the other side
