Instant Rava Idli

Think of Rava Idli and we can only think of MTR. My daughter loved MTR rava idli until she tasted these idlis. But once she ate these her loyalties changed and she says these rava idli’s are the best:-)
So here is the instant rava idli recipe from the book South Indian Recipes by Tarla Dalal

Yields:16 Idli’s
Semolina/Rava           2 1/2 cups
Buttermilk                  4 cups
Oil                               2Tbsp+1Tbsp
Salt                              3/4 tsp
Black gram dal            1tsp
Bengal gram dal          1 tsp
Mustard seeds              1tsp
Coconut scrapping     2tbsp
Green chillies              2
Curry leaves                4(optional)
Eno’s fruit salt             1Tbsp
Oil                                 for greasing

Soak the rava, buttermilk, salt and 2 tbsp oil together and mix well. Let it rest for 30 minutes
Cut the chillies and curry eaves finely
Heat 1 tbsp of oil in a pan. When it is sufficiently hot ad the mustard seeds.
When the mustard splutters add the black gram and bengal gram dal. Saute for few seconds
Now add the finely cut chillies and curry leaves and saute for few seconds
Add this to the rava batter. Mix well
Heat the water in the veseel for making idli’s
Grease the idli plates
Now add the eno’s fruit salt to this. Sprinkle a little water on the salt and you will see it bubbling and frothing up.Mix it very gently. Do not over do it.
Immediately spoon this into idli moulds and steam  for 5-7 minutes or until done
Serve warm with Chutney of your choice/sambhar or idli milagai podi
