    Cucumber paneer bites:

    These bites have the perfect combination of crunchiness from the cucumber slices, the soft creamy texture given by the mashed paneer and the tangy taste by the added lemon juice and the perfect jhatpat taste given by the chaat masala. I can assure you of one thing, and that is you will just not stop with a single bite. There are many variations you can make with the filling and presentation too. I saw these appetizers and had bookmarked as I knew these would be a big hit with the kids. I changed the filling to suit our indian style.

    Generally for any party especially the kid’s party , we need to have good appetizers which are visually very appealing. Kids love these more than the main course and next they love to indulge in desserts as well. So let us plan and make these lovely appetizers which are definitely healthier than the store bought ones and very delicious too.

I always follow the rule that the child should eat everything we prepare in moderation and this in turn will help him/her to grow very well.Instead off buying the snacks off shelf, we can prepare these lovely appetizers with a little pre planning.     Wash the cucumbers, cut the ends. Now cut the cucumber into 3 inch pieces aprroximately

    Peel the skin alternatively as seen in the pictures

    Scoop out the center seed portion. Make sure you form a cup only, not to scoop out till the full depth

    Transfer the paneer, chilly, mint leaves, salt and milk to a mixer jar. Run it till it gives a smooth paste. Add more milk if the required consistency is not achieved

    Transfer this to a piping bag and pipe out the filling in the center. I used a piping bottle that vibha brought from munich

    Cut the cherry tomatoes into small wedges and decorate the cucumber paneer bites. Cool in the refrigerator and serve .
