Ingredients

Adjust Servings:
1/4 cup Finger Millet flour Ragi flour
1 Carrot
10 Beans
1/4 cup Peas
1/2 cup Spinach chopped
1 tsp Ghee
1/2 tsp Oregano
1 tsp Pepper powder
To taste Salt
2 cups or more Water

    Zan is a porridge from the state of Arunachal pradesh. People of this state prefer to have Zan which is a finger millet porridge with lots of vegetables in it.

    Zan-finger millet porridge

    As I prefer to have millet over rice anytime, I thought this was the best choice  for breakfast from arunachal pradesh. Poonam challenged me to cook with millet flour and carrots and I cooked this porridge for the challenge.

    This millet porridge is so filling with all the vegetables in it that it can easily substitute your regular breakfast. If you are on a low carbohydrate diet and want a healthy breakfast, then you should eat this.

    THE BENEFITS OF USING FINGER MILLET IN OUR MENU:

    1. Finger millet is a rich source of protein , calcium and iron.
    2. Because of its high nutritive value, it is recommended as a weaning food.
    3. It helps in controlling the sugar level and hence recommended for diabetics.
    4. Consumption of ragi is said to relax the body naturally.

    However it is advisable to not to overeat any millet and consult your physician/ dietican.

    I use most of the millets in my daily menu. The carbohydrate intake does reduce and being a healthier option, this is highly recommended . In this porridge we have added vegetables like carrot, beans, Spinach,coriander and peas and hence this is a meal in itself. One big bowl of Zan should be enough to take care of your morning hunger pangs.

    If you find the porridge a little bland, you can always spruce it up with the spices which you like. Oregano and thyme goes very well with the porridge. Add a dash of pepper powder or paprika powder if you want to make it spicy as well.

    Cut the carrot and beans into small pieces. Wash and cut the spinach into small pieces too.

    Blanch all the vegetables and keep aside

    Heat the ghee in a pan. Saute the millet flour in it for few seconds

    Now add little water and make a paste , continuing to cook in low flame while stirring continuously.

    Add more water and salt . Add the blanched vegetables and cook for few minutes till it starts to thicken.Now add the spice powder, cook for 1 minute and switch off the fire

    Sprinkle the pepper powder and transfer it to the serving bowl and serve warm

    A very healthy and filling share for the theme Veena. My daughter keeps on demanding no carb meals in the evening, so instead of making this for breakfast, will have to make it for dinner for her.
