|3 Ripe banana|
|1/2 cup Oil|
|1 tsp Baking powder|
|1 tsp Baking soda|
|1 tsp Vanilla Extract|
|1/2 cup Walnuts|
|A pinch Salt|
My daughter always says that I just need a reason to bake. And she is always right. I love to bake but am off baked goodies for health reasons. But I always wait for an opportunity to bake and this opportunity came in disguise of my friend Priya. When we met recently and she tasted my Semolina orange marmalade cake, She asked me if I could bake a banana walnut cake for her and I readily agreed. So this morning, I quickly gathered the ingredients and baked this moist eggless banana walnut loaf cake for her.
This eggless banana walnut loaf cake is one of the easiest cakes that I have ever baked. We just need ripe bananas, a handful of walnuts and the usual all-purpose flour, baking powder, baking soda and sugar. Since I have not used butter, the loaf is not very dense too. Here I have used all-purpose flour, you can choose to use whole wheat flour or a mixture of all purpose flour and whole wheat flour too. Instead of using white sugar you can use brown sugar too.
A slice of this warm cake goes perfectly well with a hot cup of coffee.
Preheat the oven to 180C
Grease a loaf tin well.
Sieve the flour, baking powder, baking soda and salt together. Keep aside.
Mash the bananas well.
Now add sugar to the mashed bananas and mash thoroughly
Add oil and vanilla extract and whisk everything together.
Now add the flour mixture to this and mix well.
Finally fold in the chopped walnuts and bake for 40-45 minutes or until the skewer inserted in the center comes out clean
