125 gms Butter
163 ml Water
1 tsp Instant coffee
110gms Castor sugar
17 gms Cocoa
50 gms Dark chocolate
125 gms All purpose flour
1/2 tsp Baking soda

    Chocolate cake is loved by most of us. And there are so many variations of a simple chocolate cake. This eggfree chocolate mud cake is very soft cake, pillowy soft. Though I do not like chocolate or cakes, I have a chocoholic friend who is a die-hard fan of chocolates.  I am sure she would have loved it topped with chocolate frosting. Though she loves savoury bakes from me, she does not refuse a chocolate cake too.

    EGGFREE CHOCOLATE MUD CAKE

    A mud cake is a very dense cake best meant for carving. The mud cake essentially has the melted chocolate in it and here in chocolate mud cake, the liquid ingredients are mixed into the dry flour mix. Baked at a comparatively low temperature of 160C for a long time. Since the texture was so good, I skipped frosting the cake. My next mud cake will be frosted with chocolate mousse. Am sure my friend is reading this:). Vibha is another chocoholic who loves my bakes and she will love this egg free chocolate mud cake.

    Add butter, chocolate, sugar, cocoa powder and water to a sauce pan

    Heat it on a very low flame till everything combines and the sugar dissolves. Let it not boil. Simmer it for 5 minutes and switch off the fire. Let it cool down completely

    Now preheat the oven to 160C

    Grease the 4 " round pan with butter and line with parchment paper

    Sift flour and baking soda together

    Now add the wet ingredients to the flour mixture and whisk well till everything combines well and there are no lumps

    Pour it into the prepared pan and bake for 40-50 minutes or till the skewer comes out clean

    Let it cool in the pan for 20 minutes

    Invert it on a wire rack and then cut into slices and serve

    The cake was fabulous Veena, LOVED it. The intense chocolate taste took this to a different level. I can’t wait for the cake frosting. I don’t want to disclose your friend’s name

    How chocolatey its looks, wish i could get a huge slice of this mud cake, i cant imagine making mud cake without eggs, after going through yours i dont want to ran behind eggs for baking some mud cake at home.

    I think I know that friend now reading the top most comment… 😉 The mud cake looks amazing, that texture… I always like fluffy chocolate cakes that dense ones don’t go so well with me, but would love to bake a small one and sharing it… hehe…

    The cake has a beautiful texture and looks so tempting that want to grab the piece and take a bite!! on my baking list next for my kids who love chocolate cakes!!
