Do you like this chocolate loaded cake? My children love anything to do with chocolate. Though I do not eat any baked items, both Vibha and Sai always get me stuff related to baking. They know how much I love to bake. Vibha gets many ingredients which I have not seen here in Chennai from Munich and Sai brings in all the ingredients necessary to bake a cake, while he is not sailing and will make sure I bake them and he usually loves to click it and enjoys eating too. While on his recent visit to Bombay he got me a lovely baking book on cupcakes. The pictures are so beautiful in this book. Does he stop with that? No. He gets me a lovely apron printed with cupcakes and whisks and everything to do with baking. He even tries to get me recipes to try. One such recipe is the poke cake and I baked this eggless chocolate poke cake specially for his birthday. I wonder how both of them find such gifts for me.
Talking about kids, How many of you agree that they are our teachers as much as our parents were? I firmly believe that they teach us many things. We need to learn a few things and unlearn a few. From vibha, I learn how not to be judgemental, How to accept others as they are and being a firm person and believing in oneself. From sai, I learn how to put others ahead of me and how to genuinely be happy for others. Well, today is Sai’s birthday and he is far away sailing. So baked this eggless chocolate poke cake remembering how much he would have loved to photograph it and relish it too.

The recipe link which Sai had sent me had eggs. I baked an eggless cake and followed the topping of that cake. The condensed milk chocolaty filling which seeps inside the cake will make the cake more delicious. Next comes the whipped cream chocolate frosting and if you are a chocoholic like Sai and Vibha, you will love the frosting too. It is whipped cream with cocoa and further topped with white Hershey kisses which are powdered coarsely. I sincerely feel that this is chocolate overload but I am sure it is super delicious.

FOR THE CAKEPreheat the oven to 180C |

Grease the 6"square baking pan and line it with parchment paper |

Sift the flour, soda, baking powder and cocoa powder. Keep it aside |

Beat sugar, oil, instant coffee powder mixed with hot water, milk, curd till it is frothy |

Fold in the dry ingredients. Mix well |

Pour in the prepared tin and bake for 30 mins or until the skewer inserted in the middle comes out clean |

FOR THE FILLINGTransfer the prepared cake to the cooling rack. Let the cake sit in the same tin |

Mix the chocolate chips and condensed milk in a microwave safe bowl |

Heat it for 30 seconds in microwave HIGH. mix well. If it has not melted, heat for another 30 seconds. Mix well |

Make holes in the cake with a wooden skewer. The size of the hole can be upto 1/4" wide, at equi distance all over the cake |

Pour the condensed milk mixture into the holes. Make sure you pour while both the mixture and cake is still hot. Else it will solidy. Let the cake cool in the pan completely |

Keep the cake in the fridge overnight |

FOR THE FROSTINGBeat cream, icing sugar, cocoa powder and vanilla with an electric beater till soft peaks are formed. Coat the top surface of the cake generously with this frosting |

FOR THE TOPPINGCoarsely powder the hershey kisses and sprinkle it on the top of the cake. Cut and serve. Store it in the fridge. |

The poke cake was in the initial list that I had put up for the Bakeathon, but then after baking so much chocolate plus not getting a chance to bake this since it needed a big audience to finish off, it sunk into oblivion. But I am surely making this for an audience. I can’t stop looking and drooling at your clicks… oh yum yum!
