Today for the alphabet E , we will travel to the united kingdom to bake and taste these royal looking biscuits.An Empire biscuit is a sweet biscuit popular in the United Kingdom , Scotland. The biscuit was originally known as Linzer biscuit and after world war 2 , it was renamed to Empire biscuit. It is also called as the Double biscuit, German biscuit, Belgian biscuit etc.It has two layers of biscuits sandwiched with a layer of jam and topped with white water icing and a glazed cherry. Though it sounds very elaborate, it is pretty easy to make these delicious biscuits.Since the day this theme was announced, I have been bookmarking the recipes that I need to bake and these biscuits are from londoneats

TO BAKE THE BISCUITSBeat the butter until soft and creamy. Now add the icing sugar, salt, Vanilla and water and beat it further until it becomes fluffy. Add the flour and mix it into a smooth dough. Wrap it in cling film and chill in the refrigerator for 30 mins |

Preheat the oven to 200C |

TO MAKE THE FILLINGHeat the jam in a saucepan in low flame for few minutes until it starts to melt. Cool it completely |

TO MAKE THE TOPPINGMix the icing sugar with enough cold water so that it has a spreadable consistency. |

ASSEMBLE THE BISCUITSApply thin jam on one side of one biscuit. Place another biscuit on top of it. Now spread some topping on it and place a cherry on the middle of the assemble biscuits. Make all the biscuits likewise. Serve with some hot tea |

Linzercookies is in my to bake list for a long time. I even bought the Linzer cookie cutter (a year back) and still have not baked them. Now that I have a fool proof recipe to make, I will make them soon. Maybe even for this marathon. My L is yet to be baked ๐
These biscuits with jam filling remind me of Jim jam jelly biscuits . Till date I open these biscuits and take a lick of the jam , you are tempting me Veena ! Super choice for the alphabet .
