Baked Bajra Pudina Mathri

Mathris are generally deep fried. Of course it is very tasty too. But when we look at the health benefit point of view, I would rather bake them. This snack is very health as it does not include any refined products. The mint used here gives a subtle flavour for the baked cracker. Fenugreek leaves can be added instead of mint leaves too. These crispy treats are a little dry. Hence I would prefer to have these with ginger lemon tea or a cup of buttermilk or neer mor.

Preheat the oven to 180C

Line the baking tray with parchment paper/ grease the baking tray

Mix the flours, pepper powder, salt and pudina in a bowl.

Add oil to it and mix well

Add required amount of water and knead it into a soft dough. Keep it covered for 10 minutes

Pinch the dough into three equal sized balls.

Roll each ball into a thin circle. Cut with cookie cutter or in required shape and size

Place it on the baking tray. Prick with fork. Apply little oil on each

Bake for 12-15 minutes or till it becomes crisp.
