Another tea time munchies are these coconut biscuits. The most important thing about this biscuit is that it is refined flour free and refined sugar free. These egg-free wholewheat coconut biscuits are buttery and crispy on the outside but chewy on the inside. One bite of this is full of goodness.

Preheat the oven to 180C |

Line the baking tray with parchment paper |

Cream the butter and jaggery till smooth |

Add whole wheat flour and salt and mix well. It will resemble bread crumbs now |

Slowly add the milk and dessicated coconut and knead into a soft dough. Add more milk if necessary |

Pinch small balls and flatten it a little. Pat some dessicated coconut on the top of each. |

Bake for 18-20 minutes or until it starts to brown |

Transfer it to a cooling tray. When completely cool, store in air tight container |

Coconut cookies sound delicious , jaggery of course must be making it all the more delicious besides making them healthy .
