Traditional Handvo is a gujarati snack made using various deals and rice. Vegetables and spices are added to make it more delicious. This is typically a savoury cake. Here, I will show you how to prepare handvo in an air fryer.
There are many types of preparing handvo. The most traditional one is using lentils and rice. This is further mixed with spices and then baked. Here I am using Rava or semolina to make a quick handvo. Tarla Dalal has a recipe wherein she uses spilt moong to make handvo. The options are as many as you can be creative.
Today I am baking the handvo in an air fryer and not the oven. That is because I am making a small quantity. Baking in an air fryer is easier and less time consuming than baking in an oven for small quantities. This recipe is adapted from Here
Baking a handvo in an oven or an air fryer is preferred as it is easy and you do not have to babysit the dish. But in case you are not able to use an over or an air fryer, no worries. You can make this delicious snack in a pan too. Make sure you cook it on a low flame till it is well cooked and turns crispy on the outside.
You can use vegetables like carrot, bottle gourd, cabbage, zucchini an spinach. Do not use vegetables which might leave out lot of water as it will make the batter runny. Here in this recipe, I have used a combination of bottle gourd and carrots.
First, get all ingredients together so that we can easily whip up the recipe. The next step would be to, add all the dry ingredients except the baking powder and mix it well. Then add the wet ingredients and mix again. Prepare the hairdryer and the mould in which the handvo has to be baked. When the air fryer is ready after preheating add the grated vegetables and baking, mix well and pour in the prepared mould and bake for 15 minutes or until the handvo is nice and crispy on the outside and well-cooked inside. Perfect handvo ready to be served as a snack.
