Soft Carrot Peda

I know …I know…I am over enthusiastic in cooking and blogging. I have signed up for 2 themes a week…I am sure you are thinking I am crazy…I guess I am:-)…loved the themes so much that it was so difficult to just choose one. So here I am blogging the second dish for the day and this goes to Kid’s Delight- Festival sweets for kids started by Valli
INGREDIENTS
Adapted from Jeyashri’s Kitchen
Carrot 1 cup(Grated)
Ghee 1/4 cup +2tbsp
Milk 1/4 cup
Sugar 1 cup
Gram flour 1/2 cup
Cardamom powder 1/2 tsp
Sliced almonds few
PREPARATION
Grind the carrot and milk together into a smooth paste
Grease a plate/Tray and keep aside
Sieve the gram flour to remove any lumps
Transfer the carrot paste, gram flour, sugar, cardamom powder to a pan, mix well and then cook it in low flame
While it cooks add the ghee little by little
Continue to cook and you will see that the mixture tends to bubble
Continue to cook, stirring every now and then till the mixture leaves the sides of the pan and forms a mass
Switch of the flame and transfer this to the greased tray and let it cool a little and then pinch small balls from this and roll it, flatten a little, press some sliced almonds and lovely peda’s are are ready!!
