Wow! Looks so fluffy for an eggless cake! Inviting pictures 🙂




It is December and time for another edition of Bake-A-Thon. This is an event hosted by Srivalli and here the members bake every alternate day. It need not be necessarily cakes but a dish which is baked. So if you scroll down the page, you can all the recipes from the members who are participating in this event. My first post for this event is Eggfree Hot milk cake.
This cake is relished by both young and old. Give it to a toddler , he will munch it away to glory and give it to an adult, he will say it is perfect with a hot cup of coffee. Since it easy even for a toddler to eat without messing up his hands, I thought I will post it for the event Foodie Monday bloghop where Poonam had chosen the Theme as Toddler finger foods. When baked in mini bundt pans it perfectly fits the theme.
NOTE: WHILE SERVING AS A TODDLER FOOD PLEASE USE WHOLE WHEAT FLOUR INSTEAD OF ALL PURPOSE AND CORN FLOUR AND GIVE AS VERY SMALL SERVINGS.
I baked this eggfree hot milk cake for a very dear for her birthday. She does not consume eggs and I felt this was the perfect treat for her. I had seen this recipe when Anuja had posted this on facebook. I was surprised that she had used hot milk in the recipe. Though I wondered how hot milk could be used in the cake batter, I went ahead and baked the cake and I am glad. This cake has the perfect crumb. Looks beautiful in a bundt mould and it freezes well too. This cake can be used as the base cake for fondant covering too.

Preheat the oven to 160C |

Butter the mini bundt pan well |

Sift together the flour, corn flour, baking powder and baking soda together. Keep aside |

Boil the milk and butter together on a medium flame. When it just starts to boil. switch off the fire |

Meanwhile, in another vessel, beat the condensed milk and sugar for 4 mins. Add the vanilla and mix well. |

Add the flour mixture and mix very lightly. Do not over beat and mix |

When the milk-butter mixture starts to boil, switch off the fire and pour this on the flour mixture. Mix well |

Pour the soda water and mix. Do not over mix |

Pour this in the prepared tray and bake for 20-23 minutes. Mine got done at 21 mins. If you are using a bundt pan, bake for 40 mins or until the skewer inserted in the middle comes out clean |

Let it cool in the pan for 10 minutes. Later invert it on the cooling tray and let it cool completely |

OMG! That is a wonderful looking cake. I have seen so many hot milk cakes in FB but never tried my hand at it. Looking at your successful attempt, I am inspired to try.

I have tried the hot milk cake and it is one of my favorites, I must say! Your recipe is interesting, especially with the soda water in it, I am sure it must have had a lovely texture!
