Ingredients

Adjust Servings:
1 cup Boiled mixed vegetables carrots, cauliflower, french beans green peas and potato
1 cup Onion Cut into small cubes
1/2 cup Tomato Cut into small cubes
1 tsp Garam Masala
To taste Salt
2 tbsp Oil
To be ground into a paste
2 tbsp Dessicated coconut
2 Red chilli
2 cloves Garlic
1" piece Ginger
2 tsp Poppy seeds
2 tsp Sesame seeds

    This month we at Shhh cooking secretly have decide to cook maharastrian dishes. My partner for this theme is Poornima who blogs at Poornimacookbook. She suggested that I use potato and ginger as my secret ingredients and I thought what better way to make a maharastrian dish than vegetable kolhapuri.

    There are subzi and I have tried by what is given by Tarla dalal.

    Head oil and saute the onion till the turn golden brown

    Now add the ground paste and tomatoes and cook till the oil seperates

    Add the vegetables. salt, garam masala and 1/2 cup water and let it boil. Switch off the fire and serve warm

    Veg Kolhapuri is my preferred order when I want to eat something spicy. 😀 As soon as I saw the pic you posted, I wanted to read the recipe or better yet, invite myself over.

    Lovely colourful vegetable Kolhapuri, Veena! Like most of Tarla Dalal’s recipes, this one is so easy to put together. The masala paste sounds so aromatic and flavourful, with sesame as well as poppy seeds.
