Today is the day for alphabet H in the A-Z series of pulavs and biriyanis with millets. H is for hariyali or green pulav. In this hariyali quinoa pulav, I have not used the regular green masala which is ground as a paste instead I have used a lot of fresh coriander, fenugreek leaves with green peas. This is a simple hariyali quinoa pulav to make and is full of flavour
Slice the onions. Cut the chillies finely
Wash the quinoa and soak it in water for 10 minutes
Heat the ghee in a pan. Add the cumin seeds and the whole masala
Add the sliced onions and saute till it becomes transparent. Add green chillies and ginger garlic paste
Now add the drained quinoa, fresh coriander, methi leaves and mix well.
Add water, salt and garam masala, mix well
Close the lid, put the weight on and cook upto 3 whistles.
Let the pressure release normally. Fluff it up with a fork. Serve with raita.
