1/3 cup Quinoa
2/3 cup Water
1 tbsp Oil
Few Curry leaves
1tbsp Coconut
To taste Salt
FOR THE SPICE MIX
2 tsp Benagl gram dal
2 tsp Urad dal
2 Red chillies
1 tbsp Peanuts
2 tsp Sesame seeds
1tsp Oil
1/4 tsp Asafoetida

Going ahead with the pulav fest with millets, today I am blogging for the alphabet L. As I have ventured into cooking with millets and grains, I am realising the variety of one pot meal that I can make with quinoa and millets. It is not restricted to biryani or pulav any more. These ready instant spice mixes come in handy to make these one-pot meals and one such is this lemon flavoured peanut quinoa.

Here the main ingredient is the quinoa. In this lemon flavoured peanut quinoa, i am using an instant lentil spice mix to spice up the cooked quinoa. I have used lemon to flavour it later. The lentil spice mix that I have used here consists of mainly lentils like Bengal gram dal, urad dal and also peanuts and white sesame. For the spice, I have used red chillies. You can make this lentil spice mix and store it in the refrigerator and mix it either with cooked quinoa or cooked millets or even cooked rice, These mixes are a perfect boon to prepare the instant one pot meal when you have to cook in a short time.

FOR THE SPICE MIX

Heat the oil in a pan. Add all the ingredients mentioned under the spice mix. Roast it till it starts to brown. Cool it completely. Grind it coarsely in a mixer and keep it stored in an airtight container

Wash and rinse the quinoa thoroughly. Soak it in water for 10 minutes. Then drain it completely

Cook the quinoa in pressure cooker upto 3 whistles. Let the pressure release normally. Fluff it with the fork and let it cool

Heat oil in a pan. Add mustard seeds. When it splutters add the curry leaves and 2 tbsp of spice mix

Next add the cooked quinoa, coconut and necessary salt and mix well. Serve with paapad and raita

We have different masalas here , and that’s what we use to flavour our pulaos . Using podis is something I have never done and infact I just stock Idli podi . Looking at this quinoa , I feel I should stock more of these . They definitely must be so aromatic !
