Ice box cookies or the refrigerator cookies seem to have originated in America. In earlier times keeping food cold was a challenge. In America, with the advent of rail roads, insulated boxes came into existence and eventually refrigerated ice boxes found their way into the American homes. Recipes were developed and ice box cakes and cookies made their appearance. This cookie dough needs to be refrigerated for a while before baking and hence are known as ice box cookies

These cookies are the perfect melt in the mouth cookies with those chewy glazed cherries. I baked these for my son and the first reaction on seeing this was disbelief. He asked me is this Karachi biscuits???. I then realized that these taste exactly like our own Karachi biscuits from Hyderabad. He loved these cookies and so did the other who tasted these. I suggest you bake these simple yet addictive cookies soon.

Cream the butter and sugar till light and fluffy

Add milk and vanilla and beat it well.

Slowly add the flour, salt and the chopped glazed cherries. Knead it into a smooth dough

Transfer the dough onto a clean surface. Shape it into an 8" long log. Cover it with a plastic wrap. Refridgerate it for 2 hrs

Preheat the oven to 190C

Using a sharp knife , cut the log into 1/4 thick slices. Place these on a parchment paper lined baking tray 1" apart from each other

Bake for 14-16 minutes or until the edges start to brown. Remove from the oven, transfer them to a cooling rack , Let it cool completely and store them in air tight container
