This sounds like the Kutchi bharta plus quinoa ! It sure is a flavourful one pot meal .


Using quinoa has opened up so many new cuisines that I could try. I would have never thought that I would find a dish which suits my taste and yet not from my region. As I was exploring the cuisines from southern hemisphere, I chanced upon this dish with quinoa. In this smoked eggplant and quinoa with yogurt, the flavour is so much Indian. Probably the reason why I liked it so much. This is a one pot dish ,a meal by itself. It has the necessary carbs, proteins and minerals all in a single bowl of this dish.
This quite resembles the thair kathrikai which we make. Thair kathrikai is the yougurt based side dish with smoked eggplant. In addition to that here we add the cooked quinoa. We can spice it up using green chillies or paprika powder and then flavour it with coriander and I love to add curry leaves to it. This recipe is a keeper and I will be making this wholesome dish quite often

Apply oil to the surface of the eggplant. And roast it on open flame till the skin chars. Let it cool completely. Peel the skin and mash the eggplant well. Keep aside |

Cook the quinoa in 1/2 cup till well cooked. Let it cool completely |

Cut the chillies finely |

Now mix everything together and serve chilled |

This is such a interesting dish. With yogurt, eggplant and quinoa, this would make a filling meal by itself.
Definitely an interesting dish, and obviously a filling dish to satisfying some hungry tummies easily. Lovely dish there.

Sounds more like our sutta katharikai thayir pachadi as you mentioned. This is very interesting with quinoa. Will definitely try it.
