Cooking has become so much easier since the day I started cooking in my wonderchef nutripot. I have been experimenting with many recipes and today I am posting an easy thokku with tomato. This spicy tomato thokku cooked in wonderchef nutripot is a very delicious pickle.

This thokku or pickle is based on tomato as the main ingredient. We also make thokku with raw mangoes, Shallots, Coriander, Cury leaves and lemon. Tomato thokku is always made by cooking the tomato with the necessary spices in its own juice. This thokku can be cooked in a stove top too. But I love to cook it in an electric pressure cooker reason being we do not have to babysit and keep stirring.

Here in this recipe, I have used the round tomatoes or naatu thakkali. I feel this type of tomatoes are tangier and are best suited for pickles. You can choose to use any variety of tomatoes though. The method of preparing this thokku is very simple. I have added all the ingredients to the pot of the nutripot. I have pressure cooked it for 10 minutes. Later sauteed it in the nutripot for 20 minutes to get a thick tasty and fiery red tomato thokku.

Wash and cut the tomatoes finely

Switch On the Nutripot. Press the saute mode ON

Add oil to the inner pot. Then add mustard seeds and asafoetida

Once the mustard seeds begin to crackle, add the cut tomatoes

Now add the turmeric powder, chilli powder and salt. Mix well cancel the saute mode

Close the lid of the nutripot. Keep the vent in the seal position. Press the manual mode and pressure cook for 20 minutes,

Once the 20 minutes is over, it will go into keep warm mode. cancel that. Let the pressure settle. Open the lid and you will see lot of liquid in the thokku

Now press the saute mode again and let it cook for 10 minutes. Add the fenugreek powder and mix well.

At the end of 10 minutes you will get a thick delicious spicy tomato thokku. If there is more moisture left saute it for another 5 minutes

Now you are tempting me to buy the nutri pot. Sounds like wonderful addition to my crowded kitchen.
I make this thokku regularly but called it chutney. Love it so now on will serve it as chutney then next time will call it thokku. 😀
