Life is so easy when the gadgets in the kitchen are working perfectly. They will continue to work well if used properly with proper maintenance.. I love using my gadgets simultaneously. Today the whole dish is prepared in the air fryer. I like to use my air fryer in making crispy vegetables. I roast the capsicum for the soup in the air fryer. The eggplants crispies are the best so far. I must say the kurkure bhendi will perfectly suit the word kurkure. They are so crispy. Have you seen these bitter gourd fry that I fry in the air fryer? And the best point is you can make in small batches and faster too. The ease of cleaning also a higher point when compared to doing all this in an oven. This bitter gourd fry in airfryer uses only 1 tsp oil
For this month of recipe swap challenge, I have been paired with Lathiya. She blogs at lathiskitchen. While she has chosen to cook Coriander seed chutney from my blog, I chose to cook Bittergourd stir fry from her blog. While she has cooked on the stove top, I chose to use my air fryer since we like the bitter gourd to be crispy. The difference is I have omitted the use of onions in the recipe. The use of coconut with bitter gourd was very new to me. Hence went ahead and added fresh coconut and have used coconut oil too.
I must say this is a very unique combination and I loved it. My mother will be surprised if she sees that I am saying I love bitter gourd. I wouldn’t eat this vegetable in my younger days. But with age, I guess wisdom also grows. Now I know the benefits of using this vegetable and I use it regularly.
Meanwhile preheat the air fryer at 180C for 3 minutes
