Potatoes are favourites of many. Especially if the potatoes are roasted golden brown and crispy. But then the factor of too much oil does deter many from roasting it in slow fires. These are definitely tastier. However, I would like to make a small trade-off for the traditional taste with our health. On this pursuit of healthier options, I opt to make these roasted baby potatoes in air fryer.

How does an air fryer roast vegetables?

An air fryer is an important gadget in my kitchen. Yes, I use many gadgets. These help in multitasking and eases the process of cooking so that I can invest my time elsewhere. In south Indian cooking, we generally roast two of the roots. These roasted vegetables are served as a dry curry along with sambar and rasam. Potatoes and Arbi or colocasia are mostly preferred when roasted.

An air fryer is a gadget which uses hot air to circulate and cook food. The food that we cook at this very high temperature and hot air will be crispy texture on the outside. This crispy texture compares to a fried one to a certain extent. To get a more crispy texture we can increase the amount of oil while cooking. Hence roasting in an air fry is the best way to roast with minimum oil,

To get the roasted curry we usually pan roast the semi-cooked roots on slow fire. For a very crispy and golden outer crust, we tend to use more oil to roast the vegetables. To avoid this and get the nearly same effect we can air fry these vegetables as in these roasted baby potatoes in air fryer or Seppankizhangu roast in an air fryer. On the other hand, we can roast these vegetables in an oven too like this Oven-roasted Arbi.

Preparation of roasted baby potatoes in air fryer:

  1. The first point is to select even-sized baby potatoes and clean them well.
  2. We need to parboil these till just done. Do not overcook them and make it mushy. I cook them in a pressure cooker up to 2 whistles.
  3. Once they cool down completely, remove the skin of these and keep it asideair fried potato preparation
  4. Now preheat the air fryer for 3 minutes at 200C.
  5. In a bowl add the baby potatoes, turmeric powder, chilli powder, asafoetida, salt and oil. Mix wellMasala added to baby potatoes for air frying
  6. Now transfer this to the basket of the air fry and fry it for 5 minutes.potatoes in air fryer
  7. Shake the basket once, to turn the potatoes and further air fry them for another 3 minutes.
  8. Check if it is done at this stage. If you need more crispy potatoes air fry for another 2 minutes.

Ingredients
  

  • 250 gms Baby potatoes
  • 1/2 tsp Turmeric powder
  • 2 tsp Chilli powder
  • 1/4 tsp Asafoetida
  • 2 tsp Oil
  • To taste Salt

Instructions
 

  • Pressure cook the potatoes upto 2 whistles or cook them them till they just turn soft
  • Remove the skin and keep it aside
  • Now preheat the air fryer for 3 minutes at 200C
  • In a bowl add the baby potatoes, turmeric powder, chilli powder, asafoetida, salt and oil. Mix well
  • Now transfer this to the basket of the air fry and fry it for 5 minutes.
  • Shake the basket once, to turn the potatoes and further air fry them for another 3 minutes.
  • Check for doneness at this stage. If you need more crispy potatoes air fry for another 2 minutes.
