Milagu kuzhambu, paruppu thogayal is a perfect combination in pathya samayal. My mother would cook this milagu kuzhambu once a week. There was always a perfect balance in terms of food prepared throughout the week. So I also prepare a similar way. To prepare the milagu kuzhambu easily I have made the Iyengar milagu kuzhambu instant mix.

What is a milagu kuzhambu?

Milagu kuzhambu is a a tangy  and spicy slurry cooked to a perfect texture and served with rice. As the name suggests the main ingredient of milagu kuzhambu is milagu or peppercorns. Usually we roast urad dal, toor dal, pepper, chilli  with few curry leaves and let it brown. Then this is ground into a paste and then added with tamarind juice and boiled to get the right consistency. However if you are travelling or short of time to go through this process then you can use this iyengar milagu kuzhambu instant mix, mix it with the required quantity of water and boil to make the perfect milagu kubhambu,

Preparation of Iyengar milagu kuzhambu instant mix.

The first step while preparing any instant mix would be to clean, wash and dry all the ingredients thoroughly. Then with very minimum oil roast all the ingredients till they turn light brown. Roasting the tamarind to get the right texture so that it grinds without much issue is an art. Roast it in slow heat till it turns a little hard. Cool all the roasted ingredients completely. Grind it into a fine powder and store it in airtight container.

Equipment

  • Gas stove/ Induction stove
  • spice grinder
  • Pan

Ingredients
  

  • 1/2 Cup Urad dal
  • 1/4 Cup Toor dal
  • 1/4 Cup Black Peppercorn
  • 2 tsp Fenugreek seeds
  • 1/3 cup Red chillies
  • 1/4 Cup Coriander seeds
  • 1/4 Cup Curry leaves
  • 1/3 Cup Tamarind
  • 1 Tbsp Oil

Instructions
 

  • In a pan,dry roast both the dals togther till they turn light brown in colour.Transfer it to a plate
  • Next roast the coriander seeds and fenu greek seeds till a good flavour comes out.
  • Roast the pepper corn till it begins to split and transfer to the plate
  • In a slow flame roast the curry leaves till the turn crispy. Transfer it to the plate
  • Remove all the pith from the tamarind, pinch into small bits and slowly roast it till it starts to become brittle, This will take a while depending on the quantity. transfer it to a plate
  • Add the oil and finally roast the red chillies till it becomes crispy and brown. Transfer it to the plate
  • Let all the roasted ingredients cool completely
  • Grind it into a smooth powder
  • Stove it in air tight container till it is used
