This is a very flavourful spice powder typical of Tamilnadu. There are many ways to flavour a kootu. In my home generally, we make poricha kootu where coconut is ground with other spices and added to the kootu. There is podi pota kootu, wherein the sambhar powder is added to the kootu. Then there is this kootu where in this Kootu podi is added and the flavourful kootu is prepared. The specialty of this kootu powder is that it does not have coconut which is the characteristic of a typical kootu.
This podi is bookmarked from Priya’s blog. This recipe incorporates the three dals namely Bengal gram dal, tuvar dal and moong dal along with pepper and red chilies. Make a batch of this to make that flavourful kootu in a jiffy. You can also freeze a batch of this spice powder so that it does not lose the flavour.
Dry roast all the ingredients lightly
Grind into a coarse powder
Store in air tight container
