The instant pot is a boon. We can cook up most dishes in the instant pot with ease. To take this instant pot series forward here is an easy and quick version of the spicy mango thokku. If you have an electric pressure cooker then this instant pot spicy mango thokku is a must-try.
When mangoes are in season most of us make different types of mango pickle. Here we make avakkai, menthiya manga, maanga pisarel, vadu maanga and thokku. Mango thokku is one of them. In mango thokku we use finely grated mango. Use of the right amount of oil, chilli powder and salt is very essential to make a delicious mango thokku. In pickling, we generally use gingelly oil. Addition of gingelly oil adds flavour to the pickle. Again the mangoes used in these pickles differ. Here is this mango thokku I have used the bengalura variety of mangoes.
I usually make the mango thokku on a stovetop. Here is a detailed step by step preparation of making the mango thokku on a stovetop. But when I am pressed for time, my instant pot comes handy. Here the thokku gets cooked under pressure for 3 minutes and further sauteed for 3 – 7 minutes depending on the moisture content of the mango. So there is no need to babysit while the thokku is getting cooked. Consumption of oil is also less compared to the regular thokku. We can cook the sweet and spicy mango chutney in an instant pot too.
