I am a die-hard fan of Pongal the quintessential Tamil dish. In earlier days Pongal was mostly prepared in the month of margazhi and the culmination was the sakkarai Pongal on the Pongal festival. But as days went by Pongal became a regular breakfast menu in most tamizh homes. Restaurants took over with their offer of a wide variety of side dishes to go with this humble Pongal. As Pongal is a weekly ritual in my home, having the Pongal mix is very handy especially when we are short of time. The ingredients used in this Pongal mix are raw rice and moong dal or payatham paruppu. This mixture is roasted in ghee with black pepper and cumin seeds. The taste of the pongal can be enhanced by adding cashew nuts which are optional.
