I am a die-hard fan of Pongal the quintessential Tamil dish. In earlier days Pongal was mostly prepared in the month of margazhi and the culmination was the sakkarai Pongal on the Pongal festival. But as days went by Pongal became a regular breakfast menu in most tamizh homes. Restaurants took over with their offer of a wide variety of side dishes to go with this humble Pongal. As Pongal is a weekly ritual in my home, having the Pongal mix is very handy especially when we are short of time. Had bookmarked this recipe from Radha’s space and it comes over perfectly with that perfect taste. So this instant Pongal mix along with the Instant Rava upma mix is a must-have in my refrigerator.

Ingredients used in instant pongal mix:

The ingredients used in this Pongal mix are raw rice and moong dal or payatham paruppu. This mixture is roasted in ghee with black pepper and cumin seeds. The taste of the pongal can be enhanced by adding cashew nuts which are optional.

Can we replace rice in this pongal mix?

Yes. We can replace the rice with other grains. We can use quinoa instead of rice. We can use millets instead of rice. Use of broken wheat in this instant pongal mix gives you a unique taste and flavour.

Preparation  of instant pongal mix:

INGREDIENTS
Raw rice
2 cups
Moong dal
1/2 cup
Cumin
1 tsp
Pepper
1 tsp
Asafoetida
1/4 tsp
Ginger(shredded)
1 tsp
Curry leaves
few sprigs
Cashew
few
Ghee
3 tbsp
PREPARATION
       1. Heat 1 tbsp of ghee in a pan, add the cumin, Cashew, pepper, ginger and curry leaves and saute till the curry leaves become crisp. Transfer
it to a plate and let it cool.

       2. In the same pan heat the remaining ghee and add asafoetida and saute for one second. Next, saute the rice, dal mixture till all the grains are coated with the ghee uniformly.

        3. Mix the sautéed cashew pepper mixture.

        4. Mix well and store it in an airtight container
TO PREPARE PONGAL
Pongal mix
1 cup
Water
2 cups
Milk
1 cup
     1. Mix everything together with the necessary salt and pressure cook it up to 4 whistles
      2. After the pressured is released, mash it well for the yummy pongal and serve it with coconut chutney and sambhar

  • 2 Cups Water
  • 1 Cup Milk
  • To taste Salt

Instructions

  • Mix well and store it in an airtight container and refridgerate.

  • Mix everything together with the necessary salt and pressure cook it up to 4 whistles
  • After the pressured is released, mash it well for the yummy pongal and serve it with coconut chutney and sambhar
