I recently had guests at landed when it was raining very heavily.So i had to cook something very fast but which they would like for the rainy weather . Went into the kitchen and saw that I had no onion to make bajji. so checked the fridge to see what vegetables were available and i could see only cabbage and zucchini. I thought why not sneak in the zucchini in masala vadai . With a little apprehension I tried and served hot vadai’s to them and they enjoyed it without realising it had a good amount of zucchini too

Soak the two dals together in enough water for 1/2 hr |

Meanwhile grate the zucchini. Squeeze out the water and keep aside |

Drain the water from the dal completely. Transfer the dal without any water to the mixer jar. Add the chilli, salt, corainder and asafoetida |

Grind it very coarsely without water for in pulses. Do not grind it smooth |

Heat the oil in a deep frying pan. |

Mix the grated zucchini with the ground dal. Make small patties and deep fry till golden brown on medium flame. Drain on absorbent paper. Serve with a cup of hot coffee |

Perfect with a cup of coffee ,rainy or otherwise! So wise of you to sneak in zucchini!!!
What I meant to say was, so clever of you to sneak in zucchini. I would have never come up with this idea even if the zucchinis were staring straight into my eyes!

That is such a clever way of sneaking in the zucchini! For me, masala vada is ultimate. Any green or red inside it really doesn’t matter… 🙂
Masala vadas look nice and crunchy. and what a fantastic idea to sneak in the veggies.

i love the vadais but never able to make them like the ones you have here, and zucchini is a great idea to sneak in
