For the strudel Dough
1/3 cup Lukewarm water
1 tbsp Vegetable Oil
1/2 tsp Vinegar
1/8 tsp Salt
1 cup All purpose flour
2 tsp Butter
FOR THE FILLING
3 tbsp Unsalted butter
2/3 cups Bread crumbs
5 tbsp Granulated sugar
1/2 tsp Cinnamon powder
4 tbsp Raisins
for soaking the raisins Luke warm water
4 Apples
1 tbsp Lemon juice
2 tbsp Melted butter

Recently we visited Germany for a holiday and vibha had planned our further holiday in Spain and Austria. One thing she kept telling us to definitely taste the Austrian Apfelstrudel and this happened when she took us on the one day trip to Zugspitze, the highest mountain peak in Germany on the alps. It was spectacular to watch the snow clad mountains and the frozen lake below. It was here that we tasted warm apfelstrudel and it was heavenly. So for day1 of bake around the world, it is Apfelstrudel or Apple strudel from Austria.
Appel strudel is a pastry from Austria where the pastry sheet is made from a very thin dough, filled with apples and raisins and generous amount of  sugar and baked to perfection. This is served warm with whipped cream or ice cream. Search for the perfect recipe lead me to this blog and I baked this perfect apfelstudel, exactly like the one I tasted at Zugspitze

TO MAKE THE DOUGH

Mix the luke warm water, oil, vinegar and salt in a bowl

Add the flour to the bowl of a stand mixer. Slowly the liquid and continue to mix in the first speed. Then let it knead well in speed 1 for another 8 minutes. Take it out, oil well and keep it closedfor 1 hour

TO MAKE THE FILLING

Melt the butter in a pan over medium heat and add the breadcrumbs and toast them till they turn golden brown. Remove from the heat and let it cool down completely

Mix sugar and cinnamon and add the breadcrumbs to it. Mix well

Soak the raisins in warm water for 10 minutes.

Peel the apples, core it, and slice them into thin slices and mix it with the lemon juice. Add the soaked raisins to this

STRETCHING AND FILLING THE DOUGH

Roll out the dough and roll it into a rectangle as thin as possible. It should stretch as thin as possible

Brush half the dough with half of the melted butter. Spread the breadcrumb mixture over the other half

Now spread the apples and raisins on the breadcrumbs

Now fold the side ends, slowly roll the dough starting from the apple topped end

Slowly roll it into a log, place it on a baking tray lined with baking sheet, seams down. Brush it with melted butter

BAKING THE STRUDEL

Preheat the oven to 190C. Bake the strudel for 25-30 mins or when the crust strts to brown. Take it out of the oven, let it cool completely, slice it, dust it with confectioners sugar and serve with whipped cream or ice cream
