1 tbsp Ghee
10 Almonds
10 Cashew
10 Pistachios
1 tbsp Chironji
15 Raisins
10 Dates
Few strands Saffron
1/4 tsp Cardamom powder
2 Clove

Sheer Khurma is a must have dessert during Eid. The main ingredient that is used in Sheer Khurma is the Nylon vermicelli or the very thin type of vermicelli. I was not able to procure it and hence cooked it with the regular roasted vermicelli. This sheer khurma is a very close cousin of our semiya payasam but this kheer is more rich, thick and creamy. Today I have cooked this in an electric pressure cooker and this wonderchef nutri-pot sheer khurma was cooked very easily.

Traditionally this kheer is cooked on a stove top in a big kadai. The milk is slowly simmered to get the rich creamy consistency over slow cooking. But now, most of us are pressed for time and we would love to create the traditional recipes in an easier way without losing the essence of it. hence have cooked the traditional Hyderabadi sheer khurma in an electric pressure cooker which saves me a lot of time and effort and yet gives the same result.

I was a little hesitant to cook payasam or kheer in a pressure cooker for the fear of the milk curdling due to high pressure. But then a little bit of reasoning helped and I used regular milk instead of the rich cream milk which is usually used for the preparation and the milk did not curdle. I have been cooking many dishes in this wonderful electric pressure cooker Nutri-Pot and am very happy with the result. It is so easy and we do not have to babysit and worry. All we need is to set the time and we are good to go.

Today is a very special day for us. My daughter turns 25 today and this is in celebration of coming into our life 25 years back.

This week it was unanimously decided by our members that we will all cook and blog Eid recipes as it is around the corner. So my contribution is this very easy Sheer Khurma cooked in wonderchef Nutripot. Check out the recipes by other members here

Steps

Chops all the dry fruits and keep aside

Soak the saffron in 2 tbsp of warm milk and keep aside

Switch on the Nutri-Pot.

Once the pot is hot, Add ghee to the inner pot

Once the ghee is hot, add almonds, cashew, raisins, pistachios, and chironji and saute for few seconds

Now add the chopped dates, saute for few seconds

Now crush the vermicelli and add to it and mix well

Now add just 2 cups of milk and mix well. Rest of the milk can be added after the cooking process is over as the kheer tends to get thick after cooking

Cancel The saute mode. Close the lid, Keep the vent in the close position and switch on the nutripot in MANUAL MODE FOR 5 MINUTES. After 5 minutes, cancel the keep warm mode and let the pressure relaease normally

Now open the lid, mix well, Add sugar, cardamom powder and the saffron milk and mix well. Add more milk and adjust the consistency. Serve war,
