The first thought I will get when I think about carrot is carrot halwa. I can never say no to carrot halwa but now I have learnt to say so to most sweets. But I do cook these delicacies once in a while to treat my neighbours and friends. This time the quick  nutri-pot carrot halwa was for my cousin. I love carrot halwa when the carrots are cooked in milk. I do not relish the one wherein the milk solids are added.

But when carrot halwa is to be cooked in milk, we need to spend a lot of time for the milk to evaporate and the flavour to infuse. We need to keep stirring from time to time. These difficulties are erased while cooking in a pressure cooker. Let me show you how easy is it to cook in an instapot or a nutripot which are both electric pressure cookers but from different manufacturers

Nutripot carrot halwa

The time-consuming part of making this nutri-pot carrot halwa is grating the carrots. That is also overcome if you have a food processor which grates the carrot. I grated the carrot in the food processor which hardly took me a few minutes. Then I sauteed the carrot in ghee in the nutripot for approximately 1 minute. Then added milk and pressure cooked it for 5 minutes. Released the pressure, added sugar and cooked on saute mode for another 6 minutes to get the perfect nutri-pot carrot halwa

This week Poonam who blogs at Annapurna challenged us to use the carrot as the main ingredient under the theme#carrotkajalwa for Foodie Monday Bloghop. After much deliberation, I decided that I would cook this halwa in instapot.

Soak the saffron in milk. Keep aside

Switch On the nutri-pot. Press the saute mode on

Wash and grate the carrots.

Add ghee to it and let it heat up

Add the cashew and fry till it starts to brown. Take it out and keep aside

Now add the carrot, mix well and cook in saute mode for 1 minute

CANCEL THE SAUTE MODE. Add milk, mix well. Close the lid. keep the vent in seal position and cook in MANUAL MODE FOR 5 MINS

After 5 minutes, it will go into warm mode. CANCEL IT. Quickly release the pressure manually

Open the cooker, mix well and again put the nutri-pot on saute mode

Add the sugar and mix well. Continue to cook for another 2 minutes in saute mode

Now add the saffron milk mixture and cook till most of the liquid evaporates

Add the fried cashew, mix well and switch off the nutripot.

Transfer it to a serving dish and serve warm
