Eggless tutti frutti cake is a very soft and spongy vanilla cake studded with colourful tutti frutti and can be baked very easily at home.
Eggless tutti frutti cake has been my weakness in my childhood. I remember picking this whenever my dad would take me along for the market. I would look forward to the market trip just for these treats. However, as time passed I completely forgot about these. But then I happened to learn baking and from then on have been baking so much of cakes and loaves of bread that it does not take much time to bake these cakes. I like the fact that it is eggless too for 2 reasons. I don’t have to stock eggs and I don’t consume eggs. So here is a lovely colourful cake that we can bake very easily.
The best base for any tutti frutti cake would be a vanilla sponge cake. So, if you have a vanilla sponge cake recipe which bakes perfectly, then you can use that with the tutti frutti. The sponge base can be both eggless or the one with eggs. I have been baking this vanilla sponge which bakes perfectly every time. This is one of the best tea cakes and relished along with a cup of hot coffee or tea.
If you add either tutti frutti or any dry fruits just like that to the cake batter, it will definitely sink to the bottom without an even distribution. So always it is advisable to prepare the tutti frutti by adding flour to it and mix it well. The flour should coat the surface of tutti frutti.
