    Mango coconut chia pudding

    For this week of Foodie monday bloghop, the theme that was decided upon was fireless cooking. This gave us a broad spectrum of cooking, like baking, microwave cooking, grilling and then making a smoothie or an ice cream where the medium used is not stovetop. I thought I will bake bread for this but then the luscious mangoes were too inviting. So here is a simple no-cook dessert the mango coconut chia pudding.

    Ingredients used in this fruit pudding

    The ingredients used in this no-cook pudding are rich in taste and flavour. I have used the luscious mangoes, chia seeds which have huge health benefits. This is a vegan dessert since I have used the coconut milk and the almond milk to whip up this beautiful mango chia pudding.

    Mix almond milk, coconut milk , honey and chia seeds in a bowl. Mix well. Cover it and let it rest for 1 hr

    Now keep the bowl in the refrigerator for another 3 hours or over night

    Cut the mangoes pieces and alternatively arrange layers of mangoes and chia mixture. Serve cold
